Dairy is 76% usable protein that I've explained in a health article titled "Your Protein Requirement is Higher Than You Think." There are seven other articles at http://articles.x10.mx/index.html (created in November 2013). - Vitamin B12
Vitamin B12 is produced by symbiotic bacteria (prokaryotes) in the intestinal tracts of land and sea-based mammals. B12 is one of the most complex natural products produced in nature. Animals (eukaryotes) and protists (eukaryotes that are not animal, plant, or fungus) depend on Vitamin B12, but do not synthesize it, whereas plants and fungi are thought to neither synthesize it or use it. In an analysis of enteric bacteria, Dr. John R. Roth, chairman of the biology department at the University of Utah, calls this an "uneven distribution of B12 in living forms" (6) explaining that new B12 functions evolved as oxygen became part of the atmosphere.
B12 synthesis is complex requiring thirty enzyme-mediated steps in members of the prokaryotic world:
1. Symbiotic bacteria in bivalve mollusks such as clams, scallops, mussels, oysters
2. Symbiotic rumen bacteria in land-based mammals (dairy animals) - Ketogenic Diet Recipes

As I've explained my November 2013 article about protein, eggs are 90% usable protein and dairy is 76% usable protein (meat, fish and poultry contain 15-20% usable protein).
